Who Is
St Siandra?

Meet the Team

What do you get when you bring together a collective of experienced and passionate hospitality legends who believe life’s best lived around a full table?

A warm, welcoming, and wonderful restaurant with good times and happy memories at its heart.

The vibe? Effortless, yet thoughtful. Lush coastal interiors by Sally Taylor (Victor Churchill, Felix Bistro, Mr. Wong). A menu crafted by head chef Sam McCallum (ex-Nomad) that brings serious flavour. Overall operations are led by Adam George (ex-Merivale, Rockpool, QT Hotels). On the floor, you’ll find restaurant manager Elaine Falooma (ex-Chiswick), and events are in the capable hands of Sarah Shield (formerly of Laundy Hotels & Greenwood)—hospitality pros who know how to make a venue hum.

St Siandra is the brainchild of Mitch Davis and Gavin Gray—former chefs with a passion for creating unforgettable hospitality experiences—alongside Andrew Phelan, owner of ProjectPlus, whose expertise and deep knowledge of wine add a thoughtful touch to every detail.

Together, they’ve created more than just a beautiful venue. They’ve built a place that feels like a coastal escape—where the wine flows, the food is full of flavour, and the welcome always feels personal.

It’s where good taste meets good times.

Our story

What's In A Name

No. 46

St Siandra No.46 was one of Sydney’s most successful yachts, famous for winning a Sydney to Hobart Yacht Race double in the 1950s and 1960s, along with many other accolades. Skippered by one of Sydney’s finest, Graham Newland, she was also the first Middle Harbour Yacht Club to enter the Sydney to Hobart Yacht Race (in 1956, the same year she launched). A damn fine boat.
